The cocktail bar at ESTIMAR Valencia sits at the top of a four-star boutique hotel with 65 rooms on Calle Pintor Sorolla, in the heart of the city centre and a few minutes' walk from Plaza del Ayuntamiento. The building stands on the site of a former bank, which explains the names of its two drinking spaces: The Coin, the rooftop bar on the top floor, and The Place of Bankers, the restaurant and bar at street level.
The Coin is a small, intimate rooftop with panoramic views over the roofs of the centre. It works best as an early-evening or after-dinner stop rather than a place for a big night out, with room for only a few dozen people. There is a splash pool up there, but it is reserved exclusively for hotel guests; the terrace and bar themselves publish public opening hours.
The main reason to come is the drinks. The rooftop menu has 16 signature cocktails created with Patxi Troitiño, a Spanish cocktail skills champion with more than 30 years behind the bar, including spells at Akelarre and other Michelin-starred restaurants. Many of the recipes take their cue from Valencia, and there is a short snack menu to go with them. Downstairs, The Place of Bankers serves Mediterranean food during the day, with a weathered oak floor and solid concrete pillars, and turns into a cocktail bar in the evening under the motto of being artisans of ice and poets of alcohol.
Music stays in the background: lounge sounds most evenings and live music on Friday and Saturday nights. The crowd mixes hotel guests, couples, small groups of friends celebrating something and locals who want a quieter, more grown-up drink in the centre. Guests should be 18 or over, and while there is no written dress code, people usually dress smartly here; it is the kind of place where a shirt or a nice dress fits better than beachwear.
Opening hours start in the late afternoon and change by day and season, with later closing on Fridays and Saturdays, so check before you go. Cocktails generally fall in the €15–€25 range. Tables at The Place of Bankers can be booked online, and arriving shortly before sunset is the best way to get a spot on the terrace with the light still on the rooftops. It pairs well with dinner in the centre beforehand or a walk through the old town afterwards.
