Gato Negro is a craft cocktail bar on Carrer de Císcar 26 in Valencia's Eixample, a few minutes on foot from Gran Vía and Plaza de Cánovas. It opened in 2024 and is run by its three owners, Aleks, Polina and bartender Oleksii. One of them is always behind the bar.
Almost everything is made in house, from the ice to the cordials and syrups. The drinks lean on techniques such as clarification and fat-washing, with very little garnish: the focus is on flavour rather than show. Oleksii reached the final of Campari Academy's Negroni Challenge 2026. Records play on vinyl all night.
The bar is known for its guest shifts, bringing bartenders from well-known bars to Valencia for one night, among them Drink Kong from Rome, Apotheke from the same street, Cooktl by La Salita and Sips from Barcelona.
Practical tips: the room is small, so arrive early on Fridays and Saturdays or book a table through the bar's website. Closed on Tuesdays.
